Mancino Bianco Ambrato - 75cl - 16% ABV
The recipe includes a base of Trebbiano di Romagna wine, Neutral grape based Spirit & a healthy 37 botanicals. The key ingredients are Angelica, Chamomile, Elderflower, Genziana and Mint, that lend a floral Alpine nose, while sweet orange, ginger, pink grapefruit peal, finishing on cardamom and liquorice come through to taste.
The production takes place in an historic family run distillery in Piedmont, North West Italy. The botanicals are ground in a traditional mill that has been in use since the 1930’s, the extracts of which are then steeped in spirit before being added to the Trebbiano di Romagna wine base.
After a week-long filtration process, the liquid spends up to six months resting in stainless steel until the Vermouth is ready for bottling in small batches.

The Mancino Ambrato makes for an interesting vermouth to use with malty gins. Of course, there are Genevers for those who like a lot of those cereal notes in with their juniper fix, but try gins like Adnams, Boatyard, Cuckoo or Henstone, who all make their own base (or use malted spirit in alongside their neutral), lending them a textured undercurrent that pairs well with this particular vermouth.
