This Welsh wonder of a distillery was one of the first to come out of Wales and it very quickly established a reputation as a truly authentic maker of Craft Gin. The distillery's journey began way ahead of the curve in 1992, when farmer and cheese maker John Savage-Ontswedder commissioned Scottish  Springbank Distillery to produce the first organic whisky of the modern era.

Within years (ok, decades) John was making his own spirits on site, throwing open the doors of Da Mhile Distillery in the autumn of 2012. The ensuing spirit, Da Mhile Botanical Farmhouse Gin, was an utterly unique endeavour at the time, with its 20-strong botanical line-up challenging the increasingly wobbly status quo.

After the roaring success of their first gin, Da Mhile moved even further down a local path by plucking some seaweed fresh out of the sea and building a new gin around it. It is a wildly popular gin and one that always gets tongues wagging. Da Mhile Seaweed Gin is made with a cut down selection of botanicals from the flagship, and was specifically designed as an accompaniment to seafood. The gin is a wild, complex sea beast, with wet, salty aromas permeating. The seaweed infusion has imparted a great deal of oils, so its silky smooth too. Savoury, fresh and filled with citrus, this is fantastic strange and strangely fantastic.

To serve: Indian tonic, a sprig of rosemary and maybe even a slice of cucumber to freshen up the palate.
